This recipe is great because you can really customize it to fit your time or dietary needs. Running late or low on ingredients? Simply use a boxed brownie mix rather than making it from scratch! This can save time, effort, and ingredients and works just as great! Stellar Eats is my favorite healthier brownie mix!

Ingredients You’ll Need

Although these S’mores Brownies look like you tried hard, they’re incredibly easy to make (best of both worlds!). However, you can really customize the recipe to fit your personal preferences! Not gluten-free, dairy-free, or refined sugar-free? Just use your favorite brownie recipe/mix and cookies of choice!

  • Brownies: You can use a brownie mix (Stellar Eats is paleo and my favorite!) or you can use a homemade brownie recipe (i’ve included one!). I wanted there to be two options incase you wanted something extra quick & easy!
  • Siete Cinnamon cookies or Simple Mills Toasted Pecan Cookies: These creates the same texture and flavor as a graham cracker crust! However, you can also use graham crackers, just be sure to use the same amount (noted in the recipe card).
  • Coconut oil: just a tad is used for the curst!
  • Marshmallow fluff
    • egg whites (from a carton)
    • cream of tartar (this helps stabilize the egg whites & helps prevent it from deflating. Don’t skip it! You can find it at any grocery store or on amazon!
    • Maple syrup
    • Vanilla extract
    • Sea salt

How to Make Healthy S’mores Brownies

1. Prepare the crust

For that classic s’mores flavor, simply add the cookies or your favorite graham crackers to a food processor with the coconut oil. Process until a sandy texture forms. Press firmly and evenly into a parchment-lined baking pan.

2. Make the brownie batter & Bake

Mix the brownie batter (either depending on your brownie mix instructions or following the recipe below). Once thoroughly mixed, pour it over the base and carefully spread it out. Bake according to the package instructions or the recipe instructions below.

3. Make the marshmallow fluff

To make the marshmallow fluff, add your egg whites to the bowl of your stand mixer. Whip until frothy, then add the cream of tartar. Continue whipping until you achieve stiff peaks. In the meantime, combine the water, maple syrup, honey (if using), vanilla and salt to a small pot. Bring to a boil and allow it to bubble until it reaches 240F (this usually takes about 10 minutes, but I recommend a candy thermometer!). Once it’s ready, slowly add to the stand mixer while it’s on low. Once it’s all poured in, increase the mixer speed to high and allow it to work it’s magic! It should triple in size and be sticky/fluffy.

4. Assemble & enjoy!

Once the brownies are completely cool, spread some of the marshmallow fluff over top of the brownies, spreading it out evenly. I like to place mine in the fridge for 15 minutes or so before cutting into pieces!

Tips for the Best Gluten-Free S’mores Brownies

  • Don’t overbake — we want all the gooeyness!
  • Let them cool completely before adding the marshmallow topping. If you don’t, you’ll get a melty mess.
  • Make them nut-free by using a nut-free brownie recipe/mix!

How to Store S’mores Brownies

Store your brownies in an airtight container at room temperature for 2 days, or refrigerate for up to a week. For a warm, melty treat, reheat each piece for 10–15 seconds in the microwave or a few minutes in the oven. Or if you want to have even more fun, use a food torch to toast the tops!

  • Can I make these brownies vegan? Yes! You can use your favorite vegan brownie recipe or vegan brownie mix!
  • Are s’mores brownies freezer-friendly? They freeze well if you skip the marshmallows on top. Freeze the brownies, then thaw completely when ready to eat. Add the marshmallow topping at this point.
  • Can i just use graham crackers for the base? Absolutely! I just prefer the gluten-free cookie options as they add so much flavor and refined sugar-free. Use the same amount in ounces as specified in the recipe card!

Ingredients
  

"Graham cracker" crust

  • 1 bag Siete Cinnamon cookies
  • 3 tbsp melted coconut oil

Brownies (box/bag option)

  • 1 box/bag brownie mix of choice (prepared!)

Homemade brownie option

  • 1/2 cup almond flour
  • 7 tbsp cacao powder
  • 1/2 tsp baking soda
  • 2 eggs, room temp
  • 1/3 cup maple syrup
  • 1/2 cup coconut sugar
  • 1/4 cup melted coconut oil
  • 1/3 cup cashew or almond butter
  • 3/4 cup chocolate chips
  • 1 1/2 tsp vanilla extract
  • 1/2 tsp sea salt

Marshmallow fluff

  • 90 grams egg whites from carton
  • 1/3 cup water
  • 1/4 tsp cream of tartar
  • 1 cup 100% pure maple syrup
  • 1/4 cup honey *or more maple syrup
  • 1 1/2 tsp vanilla extract
  • pinch of sea salt

Instructions
 

Graham cracker base

  • Line an 8×8 baking dish with parchment paper.
  • Add the cookies an doil to a food processor. Process for a a minute or so until a sandy like texture. Press firmly into the bottom of the pan.

Brownies

  • If using a box/bagged brownie, prepare it according to the instructions.
  • Homemade brownie recipe:
  • Preheat oven to 350f .In a large bowl, add the coconut oil and chocolate chips. Heat in 30 second increments in the microwave, stirring between each, until completely smooth. Add in the remaining wet ingredients, whisking well until completely smooth. It's important the eggs are room-temp or else they will solidify the chocolate and oil.
  • Add the remaining ingredients into the bowl, mixing well until the brownie batter forms and no large lumps remain.
  • Spread the batter over top of the cookie base. Bake 20-25 minutes, until set in the center. You can use a toothpick to check or make sure it's firm to touch. Don't over-bake.
  • Let the brownies cool completely. I like to stick mine in the fridge to speed this up (they get even fudgier when chilled!)

Marshmallow fluff

  • Note: it's important there is NO grease residue in your bowl as it can prevent the egg whites from whipping up!
    In the bowl of your stand mixer, whip the egg whites until they’re frothy (you can also use a hand mixer!). It's important that your bowl is super clean and doesn't have any oil residue, as this can prevent the egg whites from whipping. Add in the cream of tartar and salt, then whip to soft peaks (a few minutes).
  • When they reach soft peaks, you can turn off the mixer and start making the syrup.In a medium/large pot, combine water, honey, and maple syrup. Set on the stove, turn the heat to medium and let the mixture cook until it reaches 240ºF. Try to not disturb it, but if it starts to bubble too high, simply lower the heat just slightly. I highly recommend getting a cheap candy thermometer from Amazon as it's very important it reaches 240F.
  • Remove the syrup mixture from the heat. While the mixer is going on medium, slowly pour into the egg whites. Once the syrup is all added, increase the speed and whip until the mix is thick and glossy (about 5 minutes). Add in the vanilla and whip for another minute.
  • When the brownies are cooled, spread evenly over top.
  • Store extra in a large jar or container. This marshmallow fluff stores is best within the first 3-4 days but will last up to 1 week on the counter. You can always re-whip it if you feel as though it's gone flat, but i've never had to do so!
  • I like to place the brownies in the fridge for 15-20 before slicing into pieces!
  • These will be great left in an air-tight container on the counter for 2-3 days and stored for longer term in the fridge (i prefer them from the fridge!)
