Ingredients

  • Canned pumpkin puree: Pumpkin is packed full of antioxidants and fiber. Make sure it’s pumpkin puree and not pumpkin pie filling!
  • Egg: I’m working on a vegan/egg-free option. Stay tuned! Adds some healthy fats and protein, as well as choline to the recipe.
  • Cinnamon: Cinnamon is packed with antioxidants and tastes great, so it’s a win-win!
  • Maple syrup: You can sub honey, monk fruit, etc. Monk fruit is a great sugar-free option!

Steps to make single serve ingredient pumpkin pie

  1. Mix together the pumpkin puree, egg, cinnamon, and maple syrup. Pour into a greased ramekin.
  2. Microwave for 2 minutes.
  3. Top with coconut whipped cream, chopped hazelnuts or pecans, or whatever toppings you’d like and enjoy!

fAQ’s

  • Can you make this ahead of time? This is best eaten straight away, however you can cook it and then leave it in the fridge, covered. You can enjoy it cold or reheat it prior to enjoying. It’d probably only last a day or so.
  • Can you bake this? I haven’t tried baking it so I can’t say for sure. I’d think it’d need to be baked at 350F for probably 15-20 minutes (maybe even more?). I’m not sure if that will work but it’s worth a try! I’ll trouble shoot and update this post once I do!

Ingredients
  

  • 1/2 cup pumpkin puree
  • 1 egg
  • 1 3/4 – 2 tbsp maple syrup/honey *can sub monk fruit for sugar free
  • 3/4-1 tsp pumpkin pie spice
  • 1/4 tsp vanilla extract *optional

Instructions
 

  • Mix all of the ingredients together in a bowl until smooth.
  • Spray a small ramekin with spray oil. Then pour the batter into it.
  • Microwave for 2 minutes. Remove and let cool a second, the pumpkin will be hot!
  • Top with coconut whipped topping, chopped nuts, or whatever else you'd like. Enjoy!

    I literally never write reviews but I absolutely had to for this, this recipe is insanely delicious!! I have so many food allergies/intolerances and all I’ve been wanting is pumpkin pie, and this is dead on! I had it with some coconut pumpkin spice whipped cream and omg I teared up it was so good.
