This single serve pumpkin pie is made in under five minutes with just four ingredients you probably already have on hand! It’s crustless, tastes even better than pumpkin pie (in my opinion), and makes a great healthier treat idea! Think pumpkin pie in mug cake form. It’s lower in sugar than typical pie, with a little protein and fiber to help keep you satiated!
Why you’ll love this single serve pumpkin pie
- The filling tastes INCREDIBLE. Even better than pumpkin pie!
- It makes a healthy treat, as it’s made with only a few good for you ingredients.
- You can make it sugar free by swapping monk fruit for the maple syrup.
- You don’t have to worry about having a whole leftover pie in your fridge.
- Curbs the pumpkin spice/pie craving!
How to make single serve pumpkin pie
Ingredients
- Canned pumpkin puree: Pumpkin is packed full of antioxidants and fiber. Make sure it’s pumpkin puree and not pumpkin pie filling!
- Egg: I’m working on a vegan/egg-free option. Stay tuned! Adds some healthy fats and protein, as well as choline to the recipe.
- Cinnamon: Cinnamon is packed with antioxidants and tastes great, so it’s a win-win!
- Maple syrup: You can sub honey, monk fruit, etc. Monk fruit is a great sugar-free option!
Steps to make single serve ingredient pumpkin pie
- Mix together the pumpkin puree, egg, cinnamon, and maple syrup. Pour into a greased ramekin.
- Microwave for 2 minutes.
- Top with coconut whipped cream, chopped hazelnuts or pecans, or whatever toppings you’d like and enjoy!
fAQ’s
- Can you make this ahead of time? This is best eaten straight away, however you can cook it and then leave it in the fridge, covered. You can enjoy it cold or reheat it prior to enjoying. It’d probably only last a day or so.
- Can you bake this? I haven’t tried baking it so I can’t say for sure. I’d think it’d need to be baked at 350F for probably 15-20 minutes (maybe even more?). I’m not sure if that will work but it’s worth a try! I’ll trouble shoot and update this post once I do!
