If you need a fun, new snack idea.. these rice cake snickers are IT. They taste like a real treat but are lower in sugar and offer a little protein and dose of healthy fats! And they also take like two minutes to throw together!
Are rice cake snickers healthy?
These can definitely be a healthier snack! You don’t have to completely dunk them in chocolate, rather drizzle a little over the top to make them lower in sugar. However, I use a refined sugar-free chocolate and like to add a good bit for a sweet treat!
What do you need to make them?
Rice cakes: You can do a single rice cake and use normal sized cakes or you can make the double layered ones (pictured above) and use rice cake thins (they have to be thin, because if you use the regular sized ones, they’ll be way too thick!)
Chocolate: As I mentioned, I used a refined sugar-free chocolate. Hu Kitchen is my go-to! They have so many flavors. You can use “danishealthyeats” for a discount at checkout!
Peanut Butter: You can sub any nut or seed butter.
Maple Syrup: This is optional, but adding it to the peanut butter gives it that snickers caramel vibe!
How to make rice cake snickers:
- Mix together the peanut butter and maple syrup.
- Melt the chocolate.
- Add some of the peanut butter mixture to the rice cake and top with the melted chocolate.
- Pop in the freezer to firm up and enjoy!
Rice Cake Snickers
Ingredients
- 3 rice cake thins/crackers
- 2-3 tbsp chocolate chips melted
- 1-2 tbsp peanut butter
- 1 tbsp maple syrup
Instructions
- If you want to make them with the three layers like pictured above, you'll want to use rice cake THINS and you may want to double the peanut butter, maple syrup, and chocolate in the recipe! If you're just doing one rice cake, just add the peanut butter mixture to the top of the rice cake and add the melted chocolate and freeze.
- Mix together the peanut butter and maple syrup.
- In another small bowl, melt the chocolate.
- Add a little of the peanut butter to one of the rice cakes. Stack another on top. Then Add the rest of the peanut butter. Top or dip in chocolate and pop in the freezer to firm up!
