There is just something so nostalgic about the oatmeal raisin combination for me. It’s so cozy and always reminds me of eating way too many growing up at my grandmas house. She would also add raisins and chocolate chips and that was ELITE.

Being as it’s been so warm here, I was not about to turn my oven on so I wanted to create an edible vegan cookie dough version of the classic. This was born and I am obsessed. It’s high protein too, so you’re getting some protein, healthy fats, and fiber!

Does this vegan cooke dough make a good meal prep snack?

Yes! You can use a cookie scoop to scoop the dough into balls. Then add to a mason jar, Tupperware, or baggie and store in the freezer. When you’re ready to eat, you can let them thaw a few minutes or eat them frozen as well!

Can you bake the cookie dough?

I wouldn’t! This recipe was specifically formulated to be no-bake, edible cookie dough! I don’t think they would bake properly! I do have tons of other baked cookie recipes, if that’s more your jam!

What you need to make this vegan edible cookie dough

Oatmeal: I always opt for organic rolled oats as they are less processed than quick oats!

Protein Powder: Use your favorite flavor here as it’ll add some sweetness and flavor to the recipe! Vanilla, salted caramel, or even peanut butter flavors would all be great! I highly recommend using Macro Mike, as their flavors are AMAZING. Use code amb-dani for a discount!

Raisins: I always try and opt for an unsweetened option that is just raisins, as they’re often full of vegetable oils and added sugars. Always check the label! I love these.

Almond flour: This is my fave (use “danishealthyeats20” at checkout for 20% off!) I haven’t tested any subs for this. I would say you could try using oat flour but you wouldn’t need as much, as it’s more dense than almond flour. You could start with 1/2 cup and add more as needed once everything is mixed together!

Vegan butter or ghee: I found this vegan ghee that works great! You can sub coconut, avocado, or olive oil but the butter really gives it that cookie dough feel!

Nut or Seed Butter: I like using almond or cashew butter as they have a more subtle taste and really give it that cookie dough flavor. However, you could use peanut butter, sunflower seed butter or even tahini! Ground Up makes my favorite butters (Dani15 for a discount)!

Maple Syrup: You can sub any sticky sweetener but I love the flavor the maple gives this recipe! Honey would be a great option for my non-vegan friends! (danishealthyeats20 to save 20% on my fave)

Vanilla, cinnamon, & sea salt: These all give the best flavor to the recipe!

Ingredients
  

  • 1/4 cup Protein Powder
  • 1 cup almond flour
  • 1/2 cup organic rolled oats
  • 1 tbsp vegan butter or ghee melted * See Notes
  • 2 tbsp nut or seed butter **See notes
  • 1/4 cup maple syrup
  • 1 tsp vanilla
  • Pinch of Sea Salt
  • 1/2 tbsp cinnamon
  • 1/4 cup unsweetened raisins and/or chocolate chips

Instructions
 

  • Mix all of the ingredients together. Depending on the protein powder you use, you may want to add an extra tbsp of melted butter if your dough is too dry (you could also try adding a little plant milk until it reaches your desired texture).
  • Stir in the raisins and/or chocolate chips.
  • Use a cookie scoop to form the dough into cookie dough balls.
  • Place in an air-tight container or baggie and place in the fridge or freezer. If freezing, enjoy straight from the freezer or let thaw a few minutes before enjoying,

Notes

*You can sub melted coconut oil, avocado oil, or olive oil but the butter gives it a real cookie dough feel!
**Any nut or seed butter will work, however I think cashew or almond taste best! Sunflower seed butter is a great nut-free option!
