I don’t know about you guys, but my social media has been flooded with videos telling me I shouldn’t have my coffee on an empty stomach or before breakfast… but sometimes, that’s the little joy I need in my life. So today, we’re killing two birds with one stone: coffee meets breakfast. PURE JOY.

How to Make Coffee Chia Pudding

Step 1: Mix the ingredients

Add the chia seeds, coffee, milk, maple syrup or honey, vanilla, and sea salt to a jar or bowl. Whisk thoroughly until everything is evenly combined. Add the chia pudding to your jars (I love using these meal prep jars!)

Step 2: Let It Thicken

Cover and refrigerate for at least 2–3 hours, although overnight works beautifully. Give the pudding another good stir after about 15–30 minutes to prevent the chia seeds from settling at the bottom.

Step 3: Add Your Toppings

Once thick and creamy, give it one final stir and add your favorite toppings. Enjoy!

Tips for the Best Coffee Chia Pudding

  • Whisk well. Chia seeds love to clump together, so give everything a thorough whisk when you first combine the ingredients.
  • Stir twice. For the smoothest texture, stir the pudding again about 15–30 minutes after making it.
  • Use strong coffee. Espresso or strongly brewed coffee gives the pudding a more pronounced coffee flavor without requiring a huge amount of liquid.
  • Adjust the sweetness. Depending on the milk and coffee you use, you may prefer more or less maple syrup or honey.
  • Give it time. Don’t judge the consistency immediately after mixing. Chia pudding needs time to thicken. The longer the chia seeds sit, the more liquid they absorb and the thicker the pudding becomes. If your pudding is too thick, simply stir in another splash of milk or coffee until you reach your preferred consistency.

Ingredients
  

Chia pudding

  • 1 cup coconut yogurt or greek yogurt
  • 1/3 cup cold brew or two shots of espresso
  • 1/3 cup creamy milk of choice
  • 1/4 cup chia seeds
  • 1 tbsp almond butter or cashew butter
  • 1 scoop vanilla protein powder *use one you love the flavor of!*
  • 1 tsp vanilla extract
  • 2-3 tbsp honey, maple syrup, or monk fruit
  • pinch of sea salt (don't skip!)

Topping (optional)

  • So Delicious Coconut Whip *could also use yogurt, but I like that the whip doesn't have any tanginess.
  • dusting of cacao powder

Instructions
 

  • In a large bowl, whisk together all of the ingredients, besides the chia seeds. Once smooth and no lumps remain, add the chia seeds, folding them in.
  • Divide the mixture amongst two jars. If using the coconut whipped topping, add a tablespoon or two to the top of each. Dust with cacao powder.
  • Place the lids on, then store in the fridge for at least 3 hours, but preferably overnight.
