If you love starting your morning with a coffee, you will love this Creamy Coffee Chia Pudding. It's thick, perfectly sweet, naturally energizing, and packed with fiber and healthy fats from chia seeds, that will actually keep you full all morning long. It's high protein, can be made dairy-free, and great for meal prep!
1cupcoconut yogurt or greek yogurt*use a thick option!
1/3cupcold brew or two shots of espresso *for cold brew, I like to buy Califia Farms
1/3cupcreamy milk of choice
1/4cupchia seeds
2tbspcreamy/runny cashew butter*or almond butter (optional but soo yummy)
1scoopvanilla protein powder (i used plant-based protein)*use one you love the flavor of!*
1 1/2tspvanilla extract
2-3tbsphoney, maple syrup, or monk fruit
pinch of sea salt (don't skip!)
Topping (optional)
So Delicious Coconut Whip*could also use yogurt, but I like that the whip doesn't have any tanginess.
dusting of cacao powder
Instructions
In a large bowl, whisk together all of the ingredients, besides the chia seeds. Once smooth and no lumps remain, add the chia seeds, folding them in. If you want a stronger coffee flavor, you can add in a tsp of instant espresso/coffee. Just taste & adjust all the flavors/sweetness as you'd like!
Divide the mixture amongst two jars. If using the coconut whipped topping, add a tablespoon or two to the top of each. Dust with cacao powder.
Place the lids on, then store in the fridge for at least 3 hours, but preferably overnight.

Notes
Love these meal prep jars!Protein powder: Macro Mike vanilla buttercream protein is my favorite protein to use in chia pudding, because it tastes like actual dessert. It adds so much flavor and sweetness! (You can use my code: amb-dani for a discount!). I also love Wellious! The peanut butter chocolate flavor is delicious!
