These sunbutter caramel bars are nut-free, no-bake, and absolutely delicious! They are almost like my no-bake Twix bars, but made with seeds rather than nuts, so they’re great for any of my nut-free friends! However, even if you’re not nut-free, you will sill LOVE these! They are great to make at the beginning of the week and stash in the freezer for when you need something sweet.

What is sunbutter?

Sunbutter is made by grinding sunflower seeds until they are butter-form. Much like peanut butter, but a great nut-free option! The flavor is amazing, especially paired with flavors like vanilla, maple, and cinnamon. I am obsessed with it and even often choose it over nut butters!

What’s in the sunbutter caramel bars:

Sunflower seed butter: Sunbutter is just sunflower seeds ground into butter form! Much like peanut butter, but a nut-free option! The flavor is amazing.

Maple Syrup: This is the sweetener of the recipe and pairs great with the sunflower seed butter. However, any sticky sweetener can be subbed!

Oats: These make up the base of the recipe! I haven’t tested any subs.

Coconut oil: You can sub cacao butter for a more decadent flavor or use any other neutral oil.

Chocolate: I used Hu Kitchen to keep the recipe free of refined-sugars. I couldn’t recommend them more! You can use “danishealthyeats” for a discount!

How to make the bars:

  1. Process the base ingredients and press into a lined loaf pan.
  2. Create the filling by mixing everything together until smooth. Spread over the base.
  3. Melt the chocolate and coconut oil together until smooth. Spread over the filling.
  4. Place in the freezer for at least 2 hours before cutting into bars. Enjoy!

How to store the sunbutter caramel bars:

Store them in an air-tight container in the freezer. Let them thaw 5-10 minutes before enjoying!

Ingredients
  

base

  • 1 1/2 cups oats
  • 1/4 cup maple syrup
  • 1-2 tbsp melted coconut oil
  • 1 tsp vanilla
  • pinch of sea salt

Filling

  • 3/4 cup sunflower butter
  • 1/4 cup maple syrup
  • 1/4 cup melted coconut oil
  • 1 tsp vanilla
  • Pinch of sea salt

Topping

  • 1 1/3 cups chocolate chips
  • 2 tsp coconut oil

Instructions
 

  • For the base: Add the oats to a food processor, blending until almost flour-like. Add the remaining ingredients, processing until a sticky dough forms, starting with 1 tbsp of coconut oil and adding another if needed to create a sticky texture.
  • Press into the bottom of a lined loaf pan.
  • For the filing: Mix everything together until smooth. Spread over the base.
  • Melt the chocolate until smooth. Spread over the caramel layer.
  • Place in the freezer to set, at least 2-3 hours. Cut into bars and enjoy!

    I just Finished making these (but I taste tested everything along the way) and it was super easy! One comment about the recipe is that in the filling section it is missing “cup” next to the amount of coconut oil. (At least I hope It was 1/4 cup or else this is about to be a real interesting bar).
