What is a “superfood”?

Ahh, this trendy word. There isn’t actually such thing as a “superfood”, but there are certain foods that contain impressive amounts of vitamins, minerals, and antioxidants. These foods offer a ton of nutritional benefits, making them a “super” choice 😉

How to make no bake superfood brownies

Ingredients & their benefits

  • Dates: Dates are a great source of fiber, while containing many beneficial nutrients (polyphenols, carotenoids and lignans). Dates are a great source of bone-friendly minerals such as phosphorus, potassium, calcium and magnesium and contain vitamin K which is needed for strong bones.
  • Nuts & Seeds: We are using a mix of nuts and seeds in this recipe, such as cashews and pumpkin seeds which are both packed with protein, healthy fats, and magnesium. Walnuts add a dose of healthy omega-3’s as well!
  • cacao nibs: Cacao nibs are packed full of antioxidants and make a great sub for chocolate chips!
  • Dark chocolate & cacao powder: Dark chocolate packs a ton of antioxidants, including magnesium, which is needed for over 300 processes in the human body! Studies have even found that eating 48g of organic chocolate with 70% cacao increased neuroplasticity in the brain!
  • Hemp seeds: Hemp seeds are incredibly nutritious little things! They’re packed full of healthy fats, protein, and nutrients that can protect the brain, boost heart health, and improve skin health.
  • Vanilla & Sea salt

Instructions

  • Soak the dates: Soak the dates in super hot water for 20 minutes. Drain them, then they are ready to use!
  • Add the nuts and seeds to a food processor, breaking them down into small pieces. Then add the remaining ingredients.
  • Press the mixture into a lined loaf pan and place in the freezer for 2-3 hours, until firm.
  • Remove from the pan and cut into bite sized pieces.
  • Melt the chocolate until smooth. Dip each brownie bite into the chocolate. Set them on a lined baking sheet.
  • Return to the freezer for a few hours to allow them to completely firm up.

Ingredients
  

Brownies

  • 1 1/4 cups dates *soaked in hot water for 20 mins
  • 1 cup mixed nuts & seeds *I did 1/2 cup cashews, 1/ cup pumpkin seeds, 1/4 cup walnuts
  • 1/2 cup almond butter *or other nut/seed butter
  • 1/4 cup hemp seeds
  • 2/3 cup cacao powder
  • 2 tbsp maple syrup
  • 1 tbsp water
  • 1 tsp instant espresso *totally optional!
  • 1 tsp vanilla extract
  • good pinch sea salt
  • handful of cacao nibs, goji berries, etc. Whatever you want to add in (if anything!)

Coatin

  • 1 1/3 cups chocolate chips

Instructions
 

  • Note: Have fun with these! You can use nuts/seeds you prefer, add some coconut sugar if you want them sweeter, add mix-in's, etc! You can always taste the dough after processing it and adjust!
  • Soak the dates: Soak the dates in super hot water for 20 minutes. Drain them, then they are ready to use!
  • Add the dates, nut butter, and water to a food processor, processing until a paste-like consistency. Then add in the remaining ingredients. You'll need to stop and scrape down the sides and break up the mixture to really get it to all blend together.
  • Once a cohesive dough forms, fold in any mix-in's you'd like. Then press the mixture into a lined loaf pan and place in the freezer for 2-3 hours, until firm. Remove from the pan and cut into bite sized pieces.
  • Melt the chocolate until smooth. Dip each brownie bite into the chocolate. Set them on a lined baking sheet.Return to the freezer for a few hours to allow them to completely firm up.

    1. Hi Sheila! I don’t include nutritional info just because I know a lot of my community has struggled with their relationship with food and so I focus on ingredients > macros. But I know some people find them so helpful, so I just always recommend people plug the recipe into my fitness pal with the exact brands they use (as nutritionals will vary with every brand), that way it’s most accurate for you!

    I make healthy treats like these all the time… but these… THESE are life-changing. Actually. Because I can’t be without them ever again. And waiting 3 hours for them to freeze is painful. Life is not fair. But these are delicious.
