This cashew chocolate ganache tart is so decadent, gluten-free, refined sugar-free, and no-bake! It makes a great dessert to bring to family functions but also to have stashed in your freezer when you just need a little somethin’ somethin’!

So I recently posted a photo on Instagram of one of my favorite tarts I have ever made. This one in particular, was a real crowd pleaser, as I jokingly told the story of how I brought it to a family function, didn’t tell anyone that it was “healthier”, and watched everyone devour it. The same people, mind you, who typically give me the worst time for eating healthy. THAT is when you know you have a winner, folks!

What ingredients are in the cashew chocolate ganache tart?

Cashew Butter: You can always sub another nut or seed butter!
Almond flour: This makes the base light! You could try subbing with oat flour, but you may need to add more wet ingredients as oat flour absorbs more moisture than almond flour.
Chocolate: I used 2 Hu Kitchen Cashew Butter Chocolate Bars. They’re my favorite! You can use code “danishealthyeats” for a discount at checkout.
Coconut milk: You’ll scoop the thick coconut cream from the top of the can and mix it with the chocolate to create chocolate ganache. You can use full-fat or light canned coconut milk, but the full-fat will yield a better result.
Maple Syrup: This is the sweetener in the recipe. You can sub any sticky sweetener.

How to make the cashew chocolate ganache tart:

  1. Create the base by mixing everything together and pressing into a spring pan.
  2. Mix together the filling ingredients in a blender, then pour over the base.
  3. Melt the chocolate and coconut milk together until smooth and pour over the filling.
  4. Place in the freezer to set up!
