Strawberry Protein Balls

These Strawberry Protein Balls are the sweetest little snack for when you want something fruity, satisfying, and packed with protein. Made with healthy ingredients like cashew butter, cashews, coconut, freeze-dried strawberries, vanilla, protein powder, and honey, these no-bake energy bites come together in just minutes!

Ingredients
  

  • 1/3 cup cashew butter *can also use almond butter
  • 6 pitted, medjool dates
  • 1 cup cashews
  • 1/2 cup shredded coconut
  • 3 tbsp honey
  • 1/2 cup vanilla or strawberry protein powder
  • 1 1oz bag freeze dried strawberries
  • 1 1/2 tsp vanilla extract
  • pinch of sea salt

Instructions
 

  • In a food processor, combine all ingredients besides the strawberries. Blend for a few minutes until dough forms.
  • I like to crush up the strawberries slightly so they aren't too big. Then, fold them into the dough. If the mixture seems too dry or crumbly, add a little more cashew butter or honey. If it's too sticky, add a small amount of protein powder or shredded coconut.
  • Roll the dough into balls. You can then roll them into shredded coconut if you'd like.
  • Place on a parchment-lined baking sheet. Place in the freezer for at least an hour. Then move to an air-tight container. I like to store mine in the freezer, but they can also be stored in the fridge!
