Raspberry Frozen Yogurt Bites

Raspberry Frozen Yogurt Bites are creamy, delicious, & refreshing! The viral yogurt clusters are a high protein snack that are great for not only toddlers, but all ages! They are great for the warmer months, however we make them all year round! They can be made with greek yogurt or coconut yogurt for a vegan option!

Ingredients
  

Yogurt Bites

  • 1 cup unsweetened vanilla or plain THICK greek yogurt or coconut yogurt *other yogurts may not create the creamiest texture!
  • 1-2 tbsp honey or maple syrup
  • 2 tbsp cashew butter or almond butter *optional but I find it to create a creamier cluster!
  • 1 tsp vanilla extract
  • 3/4 cup fresh or frozen berries *I used raspberries

Chocolate coating

  • 1 cup white chocolate chips
  • 1-2 tsp matcha powder (optional!)
  • 2 tsp coconut oil

Instructions
 

  • Add the yogurt, honey, nut butter, & vanilla extract to a large bowl. Mix well until thick and creamy, then fold in the berries. You can taste the mixture & adjust as you'd like.
  • Scoop the mixture (about 2 tbsp each) onto a parchment paper lined baking sheet or large plate to form clusters. Then place them in the freezer for at least 1-2 hours to allow them to firm up comletely.
  • When the clusters are frozen, melt the chocolate.  Add the chocolate chips and coconut oil to a microwave-safe bowl and microwave in 15 or 30-second intervals, stirring well between each, until smooth. Remove the frozen yogurt clusters from the freezer and quickly dip each one into the melted chocolate.
  • Return to the baking sheet or plate. Place the chocolate covered clusters back in the freezer until the chocolate has hardened, before moving them to an air-tight container for long term storage.
  • These need to be stored in the freezer, however I recommend letting them thaw at room temp for 5 minutes or so before enjoying for the creamiest consistency and to avoid that icy texture.

Expert Tips & FAQ's
    • Let the bites thaw a few minutes at room temperature prior to eating! This allows them to thaw a bit to become extra creamy and eliminate that icy texture that can form!
    • Vegan and dairy-free yogurt bites: Use dairy-free yogurt to make this recipe dairy-free. I recommend CocoJune or Culina!
    • Can I add protein powder? Yes! Feel free to add a scoop of your favorite protein powder to up the protein content. Use a powder you enjoy the flavor of, as it'll affect the overall flavor of the recipe!
    • Can I add chia seeds to the yogurt bites? Chia seeds are a nutritious, high-fiber addition to these yogurt bites! They can easily be folded into the yogurt mixture prior to forming the bites! I'd start with 1-2 tbsp.
