Peanut Butter Chocolate Fudge (Vegan, Paleo)
Healthier desserts won't get any easier than this 5 ingredient peanut butter chocolate fudge! Creamy, naturally sweetened, and made with just a few ingredients, it can't be beat! It's naturally vegan and gluten, dairy, and refined sugar-free!

Fudge
- 1 cup peanut butter
- 1/4 cup melted coconut oil
- 3 tbsp honey or maple syrup
- 2 tsp vanilla extract & goooood pinch of sea salt
Chocolate ganache
- 3/4 cup chocolate chips
- 1/2 cup coconut cream *the solid part from the top of a can of full-fat coconut milk
Fudge
Line a small square pan with parchment paper. Combine all of the ingredients in a small bowl, whisking until well combined.
Pour the mixture into the prepared pan and place in the freezer for 2-3 hours to allow it to firm up enough to pour the chocolate on top.
Chocolate ganache
When the fudge is firm, start the chocolate ganache.
Add chocolate to a heat-safe bowl. Heat in the microwave in 20 second increments, stirring between each, until melted. Alternatively, you can use the double-boiler method.
Remove bowl from heat, and allow chocolate to cool slightly. Add room temperature coconut cream, and allow mixture to sit for a minute for temperatures to assimilate. Then stir all together until creamy and silky!
Pour this over the fudge, tilting the pan to spread it out evenly. I like to sprinkle sea salt over top. Place back in the freezer for 2-3 hours until completely set. The longer the better!
When set, cut into bite sized pieces then store in an air-tight container in the freezer! These melt fast, so be sure to keep them in the freezer!
