No bake superfood brownies packed with healthy fats, fiber, and tons of nutrients! These were created with specific ingredients to ensure you're getting all the health benefits while still feeling like you're enjoying a decadent treat!
1cupmixed nuts & seeds*I did 1/2 cup cashews, 1/ cup pumpkin seeds, 1/4 cup walnuts
1/2cupalmond butter*or other nut/seed butter
1/4cuphemp seeds
2/3cupcacao powder
2tbspmaple syrup
1tbspwater
1tspinstant espresso*totally optional!
1tspvanilla extract
good pinch sea salt
handful of cacao nibs, goji berries, etc. Whatever you want to add in (if anything!)

Note: Have fun with these! You can use nuts/seeds you prefer, add some coconut sugar if you want them sweeter, add mix-in's, etc! You can always taste the dough after processing it and adjust!
Soak the dates: Soak the dates in super hot water for 20 minutes. Drain them, then they are ready to use!
Add the dates, nut butter, and water to a food processor, processing until a paste-like consistency. Then add in the remaining ingredients. You'll need to stop and scrape down the sides and break up the mixture to really get it to all blend together.
Once a cohesive dough forms, fold in any mix-in's you'd like. Then press the mixture into a lined loaf pan and place in the freezer for 2-3 hours, until firm. Remove from the pan and cut into bite sized pieces.
Melt the chocolate until smooth. Dip each brownie bite into the chocolate. Set them on a lined baking sheet.Return to the freezer for a few hours to allow them to completely firm up.
