For cookie dough cups
- 3/4 cup peanut butter, almond butter, or cashew butter *Use cashew or almond for a true cookie dough flavor
- 3 tbsp vanilla protein powder *can sub almond flour
- 2 tbsp coconut oil, melted
- 3 tbsp maple syrup or honey
- 1 tsp vanilla extract
- pinch of sea salt
Chocolate coating
- 1 1/4 cups chocolate chips
- 1 tbsp coconut oil (helps thin it out!)
For regular peanut butter cups
- 1/2 cup peanut butter
- 1 tbsp protein powder or coconut flour
- 2 tbsp maple syrup or honey
- 1 tsp vanilla extract & pinch of sea salt
In a medium bowl, add the chocolate and oil. Heat in the microwave in 30 second increments, stirring between each, until smooth. Add a little chocolate to the bottom of your molds, using a spoon to spread it out. Make sure the entire bottom is covered! Pop in the freezer while you make the fillings.
In another bowl, combine all the filling ingredients, mixing well.
Remove the mold from the freezer. Add some cookie dough to each one, packing it down.
Add the remaining chocolate over top of each filling, covering it entirely. Place the mold back in the freezer for 2-3 hours.
Carefully remove the ghosts from the molds and store in an air-tight container in the freezer!
