- 1 cup watermelon juice (about 1 1/2 cups watermelon, blended & strained *I purchase watermelon juice at the store! I love Sun Tropics. See Notes!
- 1 cup coconut water *I love trader joe's brand!
- 1 cup fresh lemon juice (about 3-4 lemons)
- 1/4 cup gelatin
- 2 tbsp honey *optional. If using a sweeter electrolyte powder, you can omit the honey but it also adds some beneficial nutrients!
- 1 pack of electrolytes *I like Lido or Ultima!
In a small saucepan over medium-low heat combine watermelon juice, lemon juice, and honey and whisk until smooth.
Slowly whisk in gelatin & whisk until completely dissolved & slightly thickened. This should take a few minutes. Alternatively, if your gelatin isn't dissolving as you'd like, place in blender & whirl away. Pour into candy molds or in a shallow baking dish. Refrigerate until firm, about 45 minutes. Store gummies in an air-tight container in the fridge and enjoy a few at a time!
Watermelon juice: You can use fresh watermelon by blending it in a blender and then straining the juice but I personally find it easiest to use 100% watermelon juice purchased from the store! I love Sun Tropics!
Storage: Because these homemade gummies are made with real ingredients and no preservatives, they will not keep at room temperature and will melt! To stay firm, they need to be stored in the fridge in an air-tight container!
