This healthy sloppy joes recipe is hearty, flavorful, and comforting! They make a great high protein dinner and meal prep, and are secretly packed with veggies while tasting like the iconic dish you grew up loving! This version is paleo, whole 30, and gluten & refined sugar-free.
Preheat the oven to 425°F and place the potatoes on a parchment-lined baking sheet. Use a fork to poke holes into the sweet potatoes. Roast for 40 to 50 minutes or until soft inside when pierced with a fork. Optional: brush the potatoes with oil prior to baking for a more caramelized outcome.

Add the oil to a large pan over medium heat. Crumble in the meat, salt, and pepper. Cook until almost all of the pink is gone. Then add in the garlic, onions, and peppers.
Cook a few minutes until the veggies have softened, 5 minutes.
While the meat and veggies are cooking, whisk together all of the sauce ingredients in a bowl.
Pour the sauce into the meat mixture, stirring well. Cooking over medium heat, it should begin to bubble. Once bubbling, reduce the heat slightly and cook for 10 minutes or so.
Serve over baked sweet potatoes with a sprinkle of fresh parsley!
