Instructions
Gummies using fruit juice
In a small saucepan, heat the juices over medium heat until warm/hot, but not boiling.
Turn off the heat and whisk in the honey. Then, whisk in 1 tbsp of gelatin at a time, whisking until it's dissolved before adding the next. Stir the mixture until all of the gelatin is dissolved (this can take 5-10 mins sometimes!)
Transfer the liquid into your gummy molds. Refrigerate for 1-2 hours until firm (time varies depending on how large your gummies are!). Once firm, remove from the molds and enjoy! Store at room-temp or in the fridge!
Gummies using whole berries
In a high powered blender, add the fruit, lemon juice, sweetener, optional collagen, and coconut water or regular water. Blend a few minutes until completely smooth. If you have lots of seeds or chunks that won't blend and you don't want them in your gummies, you can strain the mixture, but I didn't worry about this! You can taste it and adjust the sweetener as you'd like.
Pour the mixture into a large sauce pan and heat over low heat. Once it's warm, sprinkle over the gelatin and whisk it in for a few minutes until no lumps remain. If you find stubborn lumps that won't whisk in, simply remove the small chunks with a spoon.
Pour the mixture into a greased glass container to later cut into pieces OR distribute the mixture amongst whatever mold you use.
Let the mixture set at room temperature for an hour, then transfer to the fridge for 30 minutes-an hour before removing from the mold. If using a glass container, cut them into squares before trying to remove them with a spatula. If you go to remove them and they are sticking to the mold, let them stay in the fridge longer! Different fruits can set up differently.
Store in an air-tight container in the fridge for up to 2 weeks. Gummies will soften some (but still hold together) if left out at room temperature - this is how I prefer to eat them, but they are real fruit so store them in the fridge most of the time! I let them sit at room temp for a few minutes and then enjoy!
Vegan gummies
In a small saucepan heat juice and maple syrup or agave over low-medium heat. Add in the agar powder and simmer over low-medium for 5 minutes, whisking continuously.
Let the mixture cool for 5 minutes. Then pour the mixture into your molds. Place in refrigerator for about 10 minutes until gummies have fully set.
Transfer the gummies to an airtight container and store in the refrigerator.

Notes
What fruits won't work for gummies? Berries work the best. I used an antioxidant blend of strawberries, blueberries, dark cherries, and pomegranates. NOTE: Pineapple contains bromelain, an enzyme that aids in digestion of proteins and will prevent your gummies from forming a shape. Kiwi, mango, cherries, and papaya can also cause some trouble with setting up. Fresh or frozen berries will work. If using frozen, let them thaw and drain the water/liquid, then use them.
Do I need to use a silicone mold? You do not have to use a silicone mold for these. You can pour the mixture into a glass baking dish, let it cool in the refrigerator, and then cut into pieces!
Do homemade gummies need to be refrigerated? Because these gut health, beauty gummies are made with real fruit, they will need to be refrigerated. They will be okay at room-temp for an hour or so but are best kept in the fridge!
Use a dropper for easier transferring of the gelatin mixture to your molds and for less mess!
