Granola Cups with Yogurt

These granola cups with yogurt and berries make a wholesome, nutrient dense breakfast or snack idea! The cups can be made with any granola you have on hand and the filling options are endless! You can use greek yogurt or coconut yogurt for a dairy free/vegan otpion!

Ingredients
  

Granola tart

  • 2 cups crunchy granola
  • 2 heaping tbsp almond butter *or other nut or seed butter
  • 3 tbsp maple syrup

Toppings

  • Yogurt
  • Toppings of choice

Instructions
 

  • Preheat oven to 350F. Grease a muffin tin well or use cupcake liners. I used a silicone muffin tin that makes these SO easy.
  • Add the granola tart ingredients to a food processor and process until a sticky mixture forms (30 seconds or so). It should  hold together.
  • Divide the mixture amongst the cupcake tin, slightly pressing the mixture up the sides and firmly into the bottom.
  • Bake for 14-15 minutes, or until golden around the edges. Let the pan cool a few minutes and the place in the freezer. I like doing this for 20 minutes or so as it makes them extra crunchy.
  • Add yogurt of choice (you can use a flavored yogurt, plain yogurt, mix maple syrup into your yogurt if it's not sweetened, etc) and toppings of choice Enjoy!
