Frozen Caramel Apple Frozen S'mores
Frozen Caramel Apple S’mores are perfect for the summer transition into fall! Refreshing, creamy, and packed with flavor, these bars start with a fluffy whipped topping and homemade caramel apple sauce, and are then sandwiched between crunchy graham crackers! These are dairy-free, gluten-free, refined sugar-free, and can be made high protein!

- 1 box graham crackers (or homemade!)
- 1 tub So Delicious coconut whipped topping (or regular cool whip)
- 1-2 scoops vanilla protein (optional)
- 1 tsp apple pie spice (or 3/4 tsp cinnamon & 1/4 tsp nutmeg!)
- 1 tsp vanilla extract
caramel sauce
- 1/4 cup coconut cream
- 1/4 cup maple syrup (be sure to use REAL maple syrup)
- 3 tbsp coconut oil
- 1 tsp vanilla extract & pinch of sea salt
- 1 apple, diced small
- 1/3 cup chopped pecans (optional)
Dice the apple really small. In a small saucepan, combine all of the caramel ingredients. Bring to a boil over medium heat, whisking frequently. Once boiling, let it bubble for 7-8 minutes until it reduces slightly and darkens in color. I like to stir in the apples and pecans at this point. Then, remove from the heat to cool completely.
Line a small 8×8 dish with parchment paper. Add a layer of graham crackers to the bottom of it.
Open the tub of whipped topping and whisk in the protein powder (if using) and vanilla extract.Then spread the topping over the bottom layer of graham crackers.
Pour the caramel over the whipped topping, spreading it out evenly. Place graham crackers gently over top of the caramel layer.
Place the bars in the freezer overnight, or for at least 3-4 hours. The longer they chill, the better. Use a serrated knife to slice them into bars and enjoy!Store in an air-tight container in the freezer!
