Copycat KIND Frozen Treat Bars
These healthy copycat KIND frozen treat bars are just as creamy, crunchy, and crave-worthy as the original but made with simple, whole food ingredients! They’re gluten-free, plant-based, packed with some protein, and refined sugar-free, making them the perfect frozen dessert to keep on hand for a nourishing sweet fix!

"ice cream" base
- 1 cup THICK coconut yogurt or greek yogurt or cottage cheese *Cottage cheese is less tangy than the yogurt & tastes more ice cream like
- 1/4 cup almond or cashew butter
- 3 tbsp of your favorite protein powder *optional
- 3-4 tbsp maple syrup or honey
- 1 tsp vanilla extract & pinch of sea salt
caramel
- 1/2 cup almond, cashew, or peanut butter
- 3 tbsp maple syrup
- 1 tbsp coconut oil
- pinch of sea salt
- 1/3 cup chopped cashews, peanuts, etc.
Chocolate coating
- 1 cup chocolate chips
- 1 tbsp coconut oil (used to thin the chocolate)
In a small bowl, combine the chocolate chips and oil. Heat in 30 second increments, stirring well between each, until smooth. Add a little to the bottom of the molds, being sure to cover most of the bottom & bring it up the sides as well.
Place the mold in the freezer while you create the base.
In a blender, combine all of the ingredients. Blend until smooth. Taste & adjust as you'd like (more sweetener, salt, vanilla, etc).
Once the chocolate layer has hardened, remove them from the freezer. Equally divide the yogurt mixture amongst the mold, covering the chocolate shell and reaching 2/3 of the way up the sides of the mold.
Mix together all of the caramel ingredients until smooth, then stir in the nuts. Add a little of this to the centers of each bar. Then place them in the freezer for 3-4 hours until completely firm.
Once firm, remove the bars from the mold. Line a plate or baking sheet with parchment paper. Drizzle melted chocolate over top of each one. Place back in the freezer for 30 minutes to let the chocolate firm up before moving the bars to an air-tight container. Store in the freezer.
Let thaw 5 or so minutes prior to eating for the creamiest texture!
