Cookie Dough Blended Oats

Cookie dough blended oats will get you out of any breakfast rut! Blending the oats, rather than leaving them whole like in typical overnight oats, creates a creamier, pudding-like texture that is to die for! They can be made vegan, high protein, and are super easy to make!

Ingredients
  

  • 1/2 cup oats
  • 1/2 cup milk, of choice
  • 1 tbsp maple syrup
  • 2 tbsp protein powder *optional
  • 1/2 tsp vanilla extract
  • 1 tbsp cashew butter
  • handful of cacao nibs *Optional. can sub chocolate chips

Chocolate ganache topping

  • 3 tbsp coconut yogurt
  • 1 tbsp chocolate chips

Instructions
 

  • Add all of the oat ingredients to a blender, blending until smooth. Taste and adjust as needed. Stir in the cacao nibs.
  • Pour into your glass and place in the fridge overnight
  • A little while prior to eating, melt the chocolate chips until smooth. Then stir in the yogurt. Spread this over the oats and place in the freezer for 10 minutes or so or the fridge for a bit longer.
  • Once firmed up, enjoy!
