No Bake Peanut Butter Oatmeal Balls

I always have to have a meal-prepped sweet snack in my freezer. I usually make a batch of something on Sunday night and these Healthy Peanut Butter Oatmeal Balls are always on repeat because they are CRAZY easy and made with healthy ingredients. You know those old-fashioned oatmeal no-bake cookies? Yeah, think that but higher protein ;)

Ingredients
  

  • 1/2 cup peanut butter*
  • 1 cup oats
  • 1 tbsp ground flax (optional)
  • 2 tbsp coconut oil
  • 1/4 cup maple syrup
  • 1/4 cup of your fav protein powder
  • 1 1/3 cups chocolate chips
  • Sea Salt

Instructions
 

  • Mix everything together, besides the chocolate and sea salt, until a cookie dough batter forms.
  • Roll the mixture into balls and place on a lined cookie sheet. Place In the freezer for 20 minutes or so, to firm up enough to dunk in chocolate.
  • Melt the chocolate until smooth.
  • Dip each bite and return to the cookie sheet. Place back in the freezer for 2 or so hours until firm.
  • Keep stores in an air-tight container and enjoy!

Notes

*You can sub any nut or seed butter.
