Pumpkin Spice Yogurt Bites

Creamy pumpkin spice yogurt bites are covered in chocolate magic shell with bits of chopped dates and pecans. They can be made high protein, vegan or dairy-free, and are low in sugar!

Ingredients
  

Yogurt bites

  • 1 cup thick coconut yogurt or greek yogurt *make sure its THICK. Runny yogurt will not work.
  • 5 tbsp of your favorite protein powder *I like using salted caramel or vanilla flavor. Make sure it's one you like the flavor of!
  • 1/4 Cup pumpkin puree
  • 1/3 cup cashew butter or almond butter *cashew tastes best!
  • 3-4 tbsp maple syrup or honey
  • 1 tsp vanilla extract
  • 1 tsp pumpkin pie spice
  • good pinch of sea salt
  • 1/4 cup finely chopped dates
  • 1/4 cup chopped pecans *optional

Chocolate coating

  • 1 cup chocolate chips or chopped chocolate bars *or try white chocolate!
  • 1 tsp coconut oil *to help thin the chocolate out

Instructions
 

  • In a bowl, mix together all of the yogurt bite ingredients. Taste and adjust as you'd like (you can add a little extra maple syrup if needed).
  • Use a cookie scoop to scoop the mixture onto a lined baking sheet. Place in the freezer for 2-3 hours until completely solid.
  • Once solid, add the chocolate and coconut oil to a medium bowl. Use the double boiler method or Heat in 30 second increments in the microwave, stirring well between each, until melted. Quickly dip each yogurt bite and return to the cookie sheet. Place back in the freezer for an hour or two.
  • Enjoy! store in an air-tight container. see notes below for how to store!

Storing yogurt bites

  • If you want the inside to be extra creamy, after the bites have been in the freezer for an hour or two, store them in an air-tight container in the fridge. They’ll be good for a few days.
    If you want them to last longer, store them in an air-tight container in the freezer. You'll enjoy them straight from the freezer if you want them to be a firmer ice cream-bar consistency. You can let them thaw a few minutes before enjoying for a creamier texture!

Notes

Yogurt: Greek yogurt or coconut yogurt work, just be sure to use a THICK yogurt. I like CocoJune or Culina for dairy-free options. The quality and taste of the yogurt will have a huge impact on the overall flavor and outcome of the recipe, so be sure to use a yogurt you like the flavor of!
Protein powder: Much like the yogurt, protein powder will add to the overall flavor and sweetness of the recipe, so be sure to use a brand you really like the flavor of.
