No Bake Cosmic Brownie Protein Bites

These healthy, no bake protein cosmic brownie bites are the perfect snack or sweet treat! Made in one bowl with just a handful of ingredients, these brownie bites could not be easier and are so fudgy and melt in your mouth good! They are refined sugar free, vegan, and gluten free. Packed with some protien, energizing carbs, and healthy fats, these little bites make a great, balanced treat option!

Ingredients
  

Brownies

  • 1/2 cup organic rolled oats
  • 1/2 cup cacao powder
  • 1/3 cup almond or cashew butter *I don't recommend peanut butter
  • 1/2 cup + 2 tbsp chocolate protein powder *See blog post for rec's
  • 6 tbsp maple syrup
  • 1 tsp vanilla extract
  • good pinch sea salt
  • 1-2 tbsp milk, as needed

Chocolate ganache option #1

  • 3/4 cup chocolate bars, chopped or chocolate chips
  • 1/4 cup + 1 tbsp full-fat canned coconut milk *can sub heavy cream if not dairy-free. You can use Lite coconut milk but the ganache will not be as thick/decadent
  • all-natural sprinkles

Chocolate ganache option #2

  • 3/4 cup raw cacao powder
  • 3/4 cup maple syrup
  • 1/3 coconut oil, melted
  • pinch sea salt

No bake brownies without oats

  • 3/4 cup almond flour
  • 1/2 cup chocolate protein powder *plant-based works best. Don't use whey!
  • 1/4 cup cacao powder
  • 1/3 cup maple syrup
  • 1/4 cup cashew or almond butter OR coconut oil
  • 1 tsp vanilla & pinch of sea salt

Instructions
 

Brownies

  • Add the oats to a food processor, processing until they resemble flour (or at least mostly flour-like, it's okay to have a few chunks of oats). Then add in the remaining ingredients, processing until a dough forms. You want the texture to stick together, and it may be slightly sticky to touch.
  • Line a loaf pan or square baking dish with parchment paper. Add the dough to the pan. The easiest way to flatten the dough, is to wet your hands. This will prevent the dough from sticking to your fingers.
  • Brownies without oats: Simply combine all ingredients in a food processor or bowl and blend until combined. Press into the pan and follow remaining instructions! If for some reason your dough is overly dry, add a tablespoon of milk at a time until it holds together.

Chocolate ganache #1

  • Make the ganache by adding the coconut cream to a large heat-proof bowl. Microwave for 30 seconds until it's warmed through. Pour the chocolate chips in and shake the bowl to make sure the milk covers them. Set a plate or something on top of the bowl to cover it and let it sit for 10 minutes without stirring.
  • After the 10 minutes, stir the chocolate and milk together until it creates a ganache consistency.
  • Then pour over the brownie base. Top with sprinkles.Place the brownies in the freezer for 2-3 hours before removing them from the pan and cutting into bars.

Chocolate ganache #2

  • If making the second option, simply combine the melted coconut oil, cacao, salt, and maple syrup in a bowl. Whisk well until smooth. Then pour over the brownies. Top with sprinkles and place in the freezer for at least an hour or until set before cutting into pieces.
