Make your mornings easier with these delicious and nutritious meal prep egg bakes! Packed with protein and vegetables, they’re perfect for breakfast or lunch. They can be made low carb, are customizable, and delicious!
1/2cupcottage cheese (I like to blend it to make it smooth)
3/4cupbroccoli
1/2cuppeppers, chopped
1/3cupchopped onion
3/4tspgarlic powder
1tspsea salt
1/2tsppepper
any other seasonings you'd like!
cheese, for topping (optional - dairy-free cheese also works!)
Instructions
Preheat oven to 350F.
Grab two oven-safe, (that are at least 2-cups large) glass containers and grease well.
Divide the veggies amongst the two jars.
Crack in the eggs, add the egg whites, blended (or whole) cottage cheese, and seasonings.
Whisk everything together well. Top with cheese if you'd like.
Bake for 35 minutes until the centers are set. Let cool for at least 15 minutes (they'll firm up a little). Then cover and store in the fridge. Reheat when ready to eat.
Note: feel free to double the recipe to make 4 breakfasts for the week. You can use any veggies you like!
