Marry Me Tuscan Beans

Hearty, filling, and made in under 20 minutes, these Marry Me Tuscan Beans will quickly become part of your dinner rotation! Creamy beans are mixed with sun-dried tomatoes and the most delicious Marry Me sauce. These are a fun take on the classic Marry Me Chicken dish, but a great plant-based, vegan, dairy-free, and gluten-free option!

Ingredients
  

  • 2 cans white beans *See notes
  • 2 tbsp vegan butter, grass-fed butter, or ghee
  • 1/2 cup broth of choice
  • 1 cup chopped arugula or spinach
  • 3/4 cup oil-packed sun-dried tomatoes
  • 4 garlic cloves, minced
  • 1 tbsp nutritional yeast
  • 1 cup full-fat canned coconut milk/cream *or sub regular heavy cream
  • 1 tsp sea salt
  • 3/4 tsp oregano
  • 1 tbsp arrowroot flour/starch
  • 1/2 tsp each: pepper, smoked paprika, red pepper flakes
  • 1/3 cup vegan or dairy parmesan
  • 1/3 cup fresh basil, chopped

Instructions
 

  • Heat a cast iron pan or large sauce pan over medium heat. Add the butter, garlic, and spices, letting it cook for a minute or two.
  • Add in the remaining ingredients besides the coconut milk and tapioca starch. Give everything a good stir, letting it come to a small simmer. Add a splash of broth and the tapioca starch together in a small bowl, mixing until combined and no large lumps remain. Add it to the pan, along with the coconut cream. cook a few minutes until it's thickened a little and creamy. If it's too thick for you, just add a little extra broth or milk.
  • Once it's to your liking (you can taste it and adjust spices as needed), then serve! I like to top mine with fresh basil and parmesan. You can also add an extra splash of cream if you'd like!

Notes

*I used great northern beans, but butter beans, canellini beans, navy beans, any white beans will work!
Couldn't recommend my Our Place cast iron pan more! it worked great for this recipe!
    • How to store leftover marry me beans: This will keep in the fridge for up to 5 days! Simply reheat when ready to enjoy - you can add an extra splash of cream if they're too thick for your liking.
    • Can you freeze leftovers? No, I don't recommend freezing it. The cream and beans become icy when frozen and doesn't reheat well!
