Gluten-Free Monster Cookies

These healthier gluten-free monster cookies are the perfect healthy dessert! They are indulgent, yet made with just a few wholesome ingredients and are perfect for satisfying any sweet tooth while being dairy-free and refined sugar-free, as well!

Ingredients
  

  • 1 cup old-fashioned rolled oats
  • 1 cup runny/drippy almond, cashew, or peanut butter *see notes
  • 2 eggs, room temp
  • 2/3 cup coconut sugar
  • 1/2 tsp baking soda
  • 1 1/2 tsp vanilla extract
  • 1/4 tsp cinnamon
  • 1/2 tsp sea salt
  • 1/4 cup chopped nuts (walnuts, pecans, etc)
  • 1/3-1/2 cup candies or chocolate chips *measure with your heart! (:

Instructions
 

  • Preheat oven to 350F and line a cookie sheet with parchment paper.
  • In a large bowl, combine all of the ingredients besides the candies, chocolate chips, and nuts. Then fold those in last.
  • Drop the dough by 2 1/2 tbsp-ish spoonfuls onto the cookie sheet. Be sure to leave room between them with room to spread. I like to put a few extra candies on top of the cookies to make them prettier!
  • Bake for 9-11 minutes, until they're golden around the edges. Remove from the oven and let cool for 10 minutes, then remove from the cookie sheet and place on a wire rack to cool completely.
  • Store in an air-tight container for up to 3 days or freeze for long term storage!

*Be sure to use an extra creamy nut butter! Options that are super thick, not runny, won't create the perfect texture!
