Chocolate Seed Bars

Chocolate seed bars are full of flavor, crunchy, energizing, and nutrient dense! Made with just a few simple ingredients, these seed bars make a great healthy snack and when I tell you, they are ADDICTING.

Ingredients
  

Seed bars

  • 1/2 cup pumpkin seeds
  • 1/2 cup sunflower seeds
  • 1/4 cup sesame seeds
  • 3 tbsp maple syrup
  • 1 tsp vanilla extract
  • good pinch sea salt

Optional mix-ins (but so good!)

  • 1 tsp cinnamon and/or cardamom
  • small handful of goji berries or dried fruit

For coating

  • 1 cup chocolate chips

Instructions
 

  • Preheat oven to 350F. In a large bowl, mix together the seeds, maple syrup, vanilla, & sea salt until well combined.
  • You can use a mini muffin tin or standard sized muffin tin (I recommend using a silicone one for easy removal or be sure to use liners). Divide the seed mixture amongst the tin.
  • Bake for 15 minutes until they are golden. Remove from the oven and let cool a few minutes. Once the pan is cool to touch, place the pan in the fridge or frezer for an hour or so. This will help make them easier to remove and easier to dip in the chocolate.
  • In a medium sized bowl, add the chocolate chips. Heat in 30 second increments, stirring well between each one, until the chocolate is completely smooth.
  • Line a cookie sheet with parchment paper. Dip each bite into the chocolate and place on the cookie sheet. Alternatively, you could also just drizzle the chocolate over top. Place in the fridge or freezer for 10-15 minutes to allow the chocolate to harden before storing them in an air-tight container.
  • I like to keep these in the freezer and let them sit out for a minute or two before enjoying. They stay extra crispy!
