Ingredients

  • 1/2 cup almond butter *See notes
  • 1/3-1/2 cup organic old fashioned oats
  • 3 tbsp maple syrup
  • 2 tbsp ground flax seeds
  • 1 1/2 tsp cinnamon
  • 1/4 cup protein powder *Optional, see notes
  • 1 tsp vanilla + pinch of sea salt
  • 1/2 cup white chocolate, for drizzling *optional. I used a refined sugar-free option.

Instructions

  • In a large bowl, add all of the ingredients, mixing until dough forms. You can taste and adjust as you'd like. If your dough is super moist, add extra oats.
  • Roll the dough into balls and place in the freezer for at least two hours to firm up.
  • If you are using the white chocolate, once the balls have been in the freezer for 35-45 minutes and firmer, melt the chocolate until smooth. Dip each ball and place on a parchment lined baking sheet.
  • Return to the freezer for at least an hour or two before enjoying!

Notes

*You can sub any nut or seed butter.
**If you don't want to use protein powder, you can use extra oats!
