Cinnamon Roll Energy Bites (Vegan, 5 ingredients)
Cinnamon roll energy bites made with 5 ingredients and make a great make-ahead freezer snack for the week! Packed with healthy fats, fiber, and protein, they make a hunger-crushing combo! They're also so soft, perfectly spicey and sweet, you won't be able to stop ;)

- 1/2 cup almond butter *See notes
- 1/3-1/2 cup organic old fashioned oats
- 3 tbsp maple syrup
- 2 tbsp ground flax seeds
- 1 1/2 tsp cinnamon
- 1/4 cup protein powder *Optional, see notes
- 1 tsp vanilla + pinch of sea salt
- 1/2 cup white chocolate, for drizzling *optional. I used a refined sugar-free option.
In a large bowl, add all of the ingredients, mixing until dough forms. You can taste and adjust as you'd like. If your dough is super moist, add extra oats.
Roll the dough into balls and place in the freezer for at least two hours to firm up.
If you are using the white chocolate, once the balls have been in the freezer for 35-45 minutes and firmer, melt the chocolate until smooth. Dip each ball and place on a parchment lined baking sheet.
Return to the freezer for at least an hour or two before enjoying!
*You can sub any nut or seed butter.
**If you don't want to use protein powder, you can use extra oats!
