Prepare the Baking Sheet: Line a baking sheet or a square pan with parchment paper. Lightly grease the parchment paper with a small amount of oil to prevent sticking. an hour or so. Then you can remove it and slice them into pieces.
Toast the Sesame Seeds: Heat a skillet over medium heat. Add the sesame seeds and toast them for 2-3 minutes, stirring frequently, until golden and aromatic. Be careful not to burn them.
Add the honey: Add the honey or maple syrup into the pan with the seeds. Let it bubble gently for 3-4 minutes, stirring occasionally, until it thickens slightly. Then turn the heat to low and continue stirring frequently for another 1-3 minutes until it becomes a thick, sticky mixture.
Let cool: Remove the pan from the heat and pour the mixture onto the pan, spreading it out evenly. I like to spread mine out pretty thin, about 1" thick. Let cool at room temperature for a few hours until it's firmed up or pop in the fridge for
