Blueberry Crisp Overnight Oats
Blueberry crisp overnight oats make an incredible meal prep or healthy breakfast on the go. It's bursting with blueberry flavor, tons of crunchy crumble topping, while being packed full of fiber, protein, and healthy fats to keep you satiated all morning long!

blueberry compote
- 1/2 cup frozen blueberries
- 1 tsp chia seeds
- 1 tsp lemon juice
Oats
- 1/2 cup old-fashioned rolled oats
- 2 servings of your favorite protein powder *See post above if you want to leave this out
- 2 tbsp ground flax or chia seeds
- 1/2 cup coconut yogurt or greek yogurt
- 2/3 cup milk of choice
- 2 tbsp maple syrup
- 1 tsp vanilla
Crumble
- 1/4 cup oats
- 1/4 cup shredded coconut or chopped nuts
- 2-4 tsp maple syrup or honey
- 1 tbsp nut butter or coconut oil
- Sprinkle of cinnamon
Oats
Mix together the oats ingredients. Taste & adjust if you need! If your mixture is extra thick, you can add an extra splash of milk. Add to your jar.
Layer with the compote & crumble. Place in the fridge for a couple hours or overnight. Enjoy!!
