Vegan Birthday Cake Protein Bars

Vegan birthday cake protein bars make a great refined sugar free, no-bake, healthy grab-and-go snack! Super soft and chewy, these bars are made in one bowl, in just about 10 minutes! Topped with a white chocolate drizzle and healthy helping of sprinkles, they're not only super cute but curb a sweet tooth!

Ingredients
  

  • 1/2 cup almond or cashew butter
  • 1/3 cup vanilla protein powder (Use your favorite brand)
  • 1 1/4 cups super fine oat flour
  • 1/3 cup maple syrup
  • 1 tbsp coconut oil melted
  • 1/2 tsp almond extract
  • 1 tbsp plant-based milk, if/as needed
  • 3 tbsp sprinkles, of choice *more for sprinkling over top
  • 1/2 cup white chocolate *Optional - for drizzling. I used a refined sugar-free option.

Instructions
 

  • Mix all of the ingredients, besides the sprinkles and white chocolate, together until smooth. Taste and adjust as you'd like. It should be a workable dough, but not too dry. If dry, add a splash of milk or an extra tbsp of coconut oil for a more moist texture.
  • Stir in the sprinkles. Press the dough into the bottom of a parchment-lined loaf pan. Place in the freezer for at least 1-2 hours to firm up, before cutting into bars
  • If you want to, melt some white chocolate and drizzle each bar. Top with extra sprinkles and return to the freezer for a bit to firm up.
  • These are best stored in an air-tight container in the freezer!
