White Choc Macadamia Cookie Dough Bars
These bars are DELISH. If you're a white chocolate macadamia cookie fan, you're going to love these bars! They are full of protein and good-for-you ingredients. They're also no-bake and super simple to throw together. Even if you're not a white chocolate macadamia fan, these are so versatile so you can really make them to your liking!

- 1 cup almond butter *
- 1/4 Cup Maple Syrup
- 1/4 cup chopped macadamia nuts **
- 1 tsp vanilla
- 1/3 cup protein powder ***
- 1/3 cup coconut flour
- pinch of sea salt
Topping
- 1 1/3 cups white chocolate
- 1 tsp matcha Optional
Cookie dough
Line a bread loaf pan with parchment paper.
Combine all of the ingredients besides the nuts, stirring until a cookie dough texture forms. The dough shouldn't be sticky and you should be able to handle it. If your dough is too wet, add 1 tbsp protein powder at a time until you reach that consistency.
Stir in the macadamia nuts, then press into the bottom of the lined loaf pan.
Toppings
Melt the chocolate until completely smooth. If using the matcha, stir it in until you reach a bright green color - you may need to add more depending on the matcha you're using.
Pour over the base and tilt the pan to cover it evenly. Place in the freezer to set up, at least 2 hours, before cutting into bars. Enjoy!
*Any nut or seed butter will work.
**You can omit them if you don't like them or sub in any nut you like.
***Make sure you use a protein powder that you really love as it'll add to the flavor of the recipe!
