These bars are a nut-free take on the classic Twix! They're made with sunflower butter, which tastes amazing in the caramel filling! I KNOW you guys will love this one! As always, they're refined sugar-free, gluten-free, and so easy to make!
For the base: Add the oats to a food processor, blending until almost flour-like. Add the remaining ingredients, processing until a sticky dough forms, starting with 1 tbsp of coconut oil and adding another if needed to create a sticky texture.
Press into the bottom of a lined loaf pan.
For the filing: Mix everything together until smooth. Spread over the base.
Melt the chocolate until smooth. Spread over the caramel layer.
Place in the freezer to set, at least 2-3 hours. Cut into bars and enjoy!
