This nutter butter ice cream (including the dough) only requires 5 ingredients and a few minutes to make! It's such a tasty, high protein snack/dessert and couldn't be easier to make. It's also versatile, so you can switch up the ingredients to what you have on hand.
Combine all of the nutter butter ingredients together until sticky dough forms. Roll into balls and flatten slightly. Use a fork to make the indents in the cookies. Pop in the freezer to firm up.
To make the nice cream, add all of the ingredients in a blender, blending until smooth. To make this ice cream texture, use as little liquid a possible, but if you need to, add a splash of the canned coconut milk.
You can either break up the cookies into chunks to stir into the nice cream, top it, layer it, whatever you like! Enjoy!
Notes
Any nut or seed butter will work if you can't have peanut butter.*Any flavor protein will work, just use one that you REALLY like as it'll add some sweetness and flavor to the recipe. You can also just leave it out!**Use the solid cream part from a full-fat can of coconut cream. You can save the extras to use in smoothies, sauces, etc.
