Almond Joy Oat Cups

These oatmeal cups make a great breakfast or on the go snack! They're packed full of nutrient-dense ingredients and are perfectly sweet! Vegan, gluten and refined sugar-free, and so easy to make!

Ingredients
  

  • 2 cups organi old fashioned oats
  • 1/2 cup unsweetened shredded coconut
  • 2 tbsp ground flax seeds
  • 1/4 cup almond butter
  • 1/3 cup chocolate chips
  • 1/3 cup maple syrup
  • 1 cup plant milk
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp vanilla
  • pinch of sea salt

Instructions
 

  • Preheat oven to 350F. Line a cupcake tin with liners.
  • Combine the ground flax, plant milk, almond butter together until smooth. Allow the mixture to sit for 5 or so minutes, to thicken a bit, about 5 minutes.
  • Stir in the remaining ingredients until dough forms.
  • Divide the dough amongst the cupcake tin.
  • Bake for 30-32 minutes or until golden. Remove from the oven and allow to cool.
  • Store in an air tight container in the fridge. Warm before enjoying!
