Almond Joy Oat Cups
These oatmeal cups make a great breakfast or on the go snack! They're packed full of nutrient-dense ingredients and are perfectly sweet! Vegan, gluten and refined sugar-free, and so easy to make!

- 2 cups organi old fashioned oats
- 1/2 cup unsweetened shredded coconut
- 2 tbsp ground flax seeds
- 1/4 cup almond butter
- 1/3 cup chocolate chips
- 1/3 cup maple syrup
- 1 cup plant milk
- 1 1/2 tsp baking powder
- 1 1/2 tsp vanilla
- pinch of sea salt
Preheat oven to 350F. Line a cupcake tin with liners.
Combine the ground flax, plant milk, almond butter together until smooth. Allow the mixture to sit for 5 or so minutes, to thicken a bit, about 5 minutes.
Stir in the remaining ingredients until dough forms.
Divide the dough amongst the cupcake tin.
Bake for 30-32 minutes or until golden. Remove from the oven and allow to cool.
Store in an air tight container in the fridge. Warm before enjoying!
