Protein Almond Joys

One of my favorite little treats to prep for the week! Super simple, minimal ingredient, and you just throw them in the freezer!

Ingredients
  

  • 1 1/2 cups finely shredded coconut
  • 1/4 cup coconut oil melted
  • 5 tbsp maple syrup
  • 3-4 tbsp protein powder
  • 1/4 tsp almond extract
  • pinch of sea salt
  • 1 cup chocolate chips

Instructions
 

  • In a food processor, combine all of the ingredients, besides the chocolate, until a sticky dough forms. Taste & adjust as needed. Sometimes I love adding a tbsp or two of almond butter!
  • Using a cookie scoop, drop by spoonfuls onto a lined cookie sheet. Gently press an almond into the tops of each one.
  • Place in the freezer for twenty minutes or so, to harden a bit.
  • In a small bowl, melt the chocolate until smooth. Dip the bottom of the almond joy (or the whole thing) into the chocolate. Return to the cookie sheet and place back in the freezer to set, about 2 hrs! Enjoy!
