Banana Pecan Chia Parfait

These banana pecan chia parfaits make a great breakfast, snack, or sweet treat! They're full of healthy fats, protein, and fiber!

Ingredients
  

  • 1/4 cup chia seeds
  • 1 1/2 cups plant milk or canned coconut milk
  • 1 1/4 tsp cinnamon
  • 1 tsp vanilla
  • 1 banana
  • 1/3 cup pecan pieces
  • 2 tbsp pecan butter (optional but YUM)
  • 2 tbsp maple syrup

Instructions
 

  • Blend the chia seeds, milk, half the banana, half of the pecan pieces, vanilla, maple (if using), & cinnamon in a blender until smooth. You can also blend in the pecan butter or save it to drizzle over top!
  • Taste & adjust as needed.Divide amongst two jars & place in the fridge for 45min-an hour to thicken. 
  • Then layer with remaining 1/2 sliced banana & pecans.Top with a little vanilla coconut yogurt if you want a little extra somethin’ somethin’! Enjoy!
