Peanut Butter Brownie Protein Balls

These peanut butter brownie balls are gluten and refined sugar-free, vegan, high in protein, and SO DECADENT. They make a great meal prep snack or treat!

Ingredients
  

  • 3/4 cup almond or cashew butter
  • 1/4 cup chocolate protein powder
  • 1/4 cup almond flour *more as needed
  • 1/4 cup maple syrup
  • 1/3 cup cacao powder
  • 1 tbsp melted coconut oil
  • 2-4 tbsp milk, of choice *as needed
  • 1 tsp vanilla extract
  • pinch sea salt

Instructions
 

  • Note: Different protein powders create different textures. Add more almond flour/milk as needed.
  • Add all ingredients to a large bowl, mixing well until dough forms.
  • If your mixture is too dry, add in 1 tbsp of milk extra at a time, until it creates a dough that sticks together but isn't sticky to your fingers. You'll want it to be the texture of edible cookie dough!
  • Taste & adjust as needed (more maple, sea salt, etc). Fold in the chocolate chips & nuts, if using.
  • Use a cookie scoop or roll into balls & place in the freezer to firm up!
  • You can also dunk them in melted chocolate & top with sea salt if you’re feeling extra fancy!

Notes

Store in the freezer and allow to thaw a few minutes before enjoying!
