These peanut butter brownie balls are gluten and refined sugar-free, vegan, high in protein, and SO DECADENT. They make a great meal prep snack or treat!
Note: Different protein powders create different textures. Add more almond flour/milk as needed.
Add all ingredients to a large bowl, mixing well until dough forms.
If your mixture is too dry, add in 1 tbsp of milk extra at a time, until it creates a dough that sticks together but isn't sticky to your fingers. You'll want it to be the texture of edible cookie dough!
Taste & adjust as needed (more maple, sea salt, etc). Fold in the chocolate chips & nuts, if using.
Use a cookie scoop or roll into balls & place in the freezer to firm up!
You can also dunk them in melted chocolate & top with sea salt if you’re feeling extra fancy!
Notes
Store in the freezer and allow to thaw a few minutes before enjoying!
