Preheat oven to 375F. To make the ranch, combine all ingredients in a blender, blending until smooth. Store in a mason jar or air-tight container.
After pressing and draining the tofu, cut into cubes.
Add the cubes to a large bowl and drizzle over the olive oil (or spray using avocado/olive oil spray). Sprinkle over the nutritional yeast, garlic, salt, and pepper. Toss.
Sprinkle half of the tapioca flour over the tofu and give it a good toss. Then add the remaining flour, tossing once more. Spread the tofu onto a lined baking sheet.
Air fry or bake, tossing every 15 minutes or so, until golden and baked to your liking! Remove from the oven and add to to your favorite salad, bowl, etc. Top with the dressing and enjoy!
